We are doing something a little bit different. We are reviewing a cannabis cookbook. Now, I’ve always been interested in cooking with cannabis ever since I started indulging in the plant, particularly for my Crohn’s disease. And the book that we are reviewing today is Cannabis Cuisine: Bud Pairings of a Born Again Chef by Chef Andrea Drummer. This was published in 2017 and is available on Amazon and other booksellers. Now, the interesting thing about Chef Drummer is that her first experience with cannabis was not a good one. She goes into detail in the introduction, how it really significantly prejudiced her perspective with respect to cannabis throughout a good part of her life. Until at some point she had a revelation that it really could help people. And it was not as destructive as she had been led to believe from many sources.

Chef Drummer was formerly trained at Le Cordon Bleu in Los Angeles, but a lot of her culinary knowledge stems from her family and her family’s traditions. She is from the South, and a lot of her recipes in the book reflect that heritage. She breaks down the cannabis dosing and formulation of your dosages in a pretty straightforward manner. She has a chapter called Fundamentals, where she has a THC calculator and various butter and oil infusions that you can prepare. All kinds of different ones from plain old infused ghee to garlic and onion infused oil. She breaks down her cookbook in various chapters describing various and sundry dishes. I’m going to kind of follow that pattern in our review.

The first chapter is about dressings, jams and purees. She has a number of different recipes in here. The one that caught my eye was one for a bacon jam. The other interesting thing about Chef Drummer’s book is she has a lot of pairings. In other words, she will say, all right, this particular dish goes well with say Chocolate Thai or Sour Diesel or whatever. So she’s really taken into account the terpenes, and it’s for a very discriminating pallet, I think. But regardless, it’s a very interesting approach.
